Can you imagine how Japanese people are serious about Soba(buckwheat) noodle?
I am not talking about the soba noodle which comes in a cheap big bowl with big fat tempura like Japanese salaryman eat in a hurry at the station. I like it though.
I am talking about the Edo (Tokyo) style soba here.
After I moved to Tokyo, I discovered this great culture because the attitude toward soba between west and east are different.
Just one layer or one bowl of soba, they might be one of the most simple food in the world.
But soba chefs work very seriously from choosing ingredients, the method of making soba to sake, table ware etc...and we Japanese people are also serious about finding out our favorite soba restaurant.
I wish if soba culture become more familiar here in Australia like Sushi is now.
