a bit of traditional new year's food

Let me introduce some traditional Japanese dishes from my cooking class.

Osechi-ryori is a special food for New Year's Day,

housewives used to cook osechi-food every year

and each family had their original recipe

to pass it from generation to generation.

Although, lots of Japanese people like to order gorgeous osechi foods to

famous restaurants or department stores nowadays.

I am passionate about saving our unique food culture.

So I keep telling people how home made osechi food is tasty.

Rolled Cake

My guest brought delicious Japanese roll cake which she made in that morning.

Somehow Japanese love the rolled cake and they are quite serious about sweets.

There are lots of lots of delicious rolled cakes everywhere in Japan.

Write ' ROLL CAKE' on your TO EAT in Japan list !

Japanese winter dishes 2

I love beetroot!

I love them in any kind of salad or lamb ragout or soup or even just simple roasted beetroot.

But, I was wondering how I should cook them in Japanese way?

Here is my first Japanese beetroot dish.

I cook beetroot in bonito dashi stock to add Japanese flavor.

They are really good match with sweet white miso sauce which lots of Sake rice wine are used.

Furofuki Beetroot with sweet miso source

Soup with strip of daikon, carrot, snow pea and pork belly

Snapper's Snapper

Because I cook Hiramasa kingfish at the cooking class this month.

I need to buy a whole kingfish each time, and this is a  great thing for me.

I only use some fillet for my guests and rest of them are going to my dinner.

It means, I can eat my favorite parts ' HEAD and KAMA' as much as I want!

Sorry, if you feel not good...  but that's our favorite Izakaya food!

fish head and kama, carefully prepared

smells so nice

When you eat fish head (specifically kama) and if you are lucky enough,

you may find this fish shaped bones ↓

This is we called ' Snapper's Snapper'.

When Japanese people were still wearing traditional kimono,

they enjoyed this kind of finding game.

I found it tonight!
